There's a few use cases for a Variac like;
Testing a repaired electronic device.
Powering up an old radio or amplifier. Anything tube related as a sudden inrush current can cause capacitors to pop if they've been sitting for too long.
Roasting coffee beans or nuts.
Adjusting the temperature of a resistance-type heater.
Hot-wire cutting of Styrofoam.
Dimming incandescent lighting. ( Does not work on LED/Fluorescent lighting)
Changing AC fan speed over a narrow range.
